EagleWildlife Abounds at Faraway Bay

Favourite Faraway Bay Recipe

Resident chef Sam prepapes a mean Mango and Yoghurt Sorbet Mango and Yoghurt Sorbet

Ingredients:

Mango Sorbet
3 fresh mangoes                         
200ml champagne
80g sugar

Yoghurt Sorbet
3 egg whites
80 g castor sugar
500g Greek style yoghurt

Method

To make the mango sorbet heat champagne and sugar in a saucepan to make a sugar syrup. Add blitzed mango and reduce for 3 minutes on a low heat. Once cooled, place in an ice cream churner, or metal mixing bowl in freezer and stir every hour until it reaches sorbet consistency. Place the mango sorbet in a glad wrap lined rectangular bread tin and set aside.

To make the yoghurt sorbet place sugar and egg whites in a metal bowl and whisk over a simmering water bath until soft peaks form, gently fold through the Greek yoghurt. Churn as per Mango Sorbet instructions. Pour the Yoghurt Sorbet over the Mango Sorbet in the mold. Wrap and freeze until solid.

Once frozen, turn out the sorbet on to a board and slice 3cm thick portions with a hot knife to be serve on a cold plate.

• Faraway Bay is located on a cliff top, 280km north west of Kununurra overlooking the Timor Sea
• Access is by chartered light aircraft from Kununurra, Broome or Darwin or by helicopter. From the landing strip it’s a four wheel drive trip to the camp.
• Construction of the Bush Camp was completed in 1996 and since then it’s won WA and Australian Tourism Awards.
• Faraway Bay The Bush Camp is an exclusive property catering for a maximum of 12 guests in eight cabins which enjoy 180 degree views of the wilderness.
