This time, we’re looking at some great bush tucker cooking tips in honour of the Bush Tucker and Camp Oven Cooking School happening in August:
1. Toasted wattle seed is a great addition to many tasty dishes. It is particularly great to use in desserts. It adds almost a coffee flavour to syrups, or toffee- makes a great caramel sauce or ice-cream flavour. 2. Another beautiful delicate flavour is the lemon myrtle. This can be used infused into syrups for cakes, to flavour sorbet, as an alternative to lemon in lemon cake or cheese cake. 3. Citronella grass adds great flavour for fish dishes - bind fish in the grass before wrapping in paperbark and baking. 4. A beautiful kangaroo dish is lightly seared kangaroo fillets marinated in spices served with a lemon myrtle yogurt. 5. Native passionfruit jam, can also be used as a glaze for cakes.
